Cajun Sausage, Beans & Rice

Ingredients:

  • 1 # Smoked Sausage
  • 2 cups Pinto Beans, cooked
  • 1 cup Red Beans, cooked
  • 1½ cups Chicken Broth
  • 2 tabl Vegetable Oil
  • 1 tabl Fresh Garlic, minced
  • 2 tabl Cajun Seasoning
  • 4 cups White Rice, cooked
  • ¼ cup Scallions, chopped

Method:

  1. Heat oil in skillet; add sausage and lightly brown, add beans, garlic chicken, Cajun seasoning and broth and simmer for approximately 5 minutes.
  2. Mold rice in cup and turn out into dinner bowl; ladle bean and sausage mix over all and sprinkle with chopped scallions.
  3. Add Louisiana Hot sauce as needed.
